As recommended by Louise.
Butter – 120g
Castor sugar -60g (If you have a sweet-tooth double this)
Honey – 1tbsp
Egg yolk – 1
Cinnamon – 1tsp
Self-raising flour – 180g
Extra sugar and cinnamon for dusting the balls, see below. (I go heavy on the cinnamon!)
Cream the butter and sugar together.
Beat in the honey and egg yolk.
Add the cinnamon and flour, and mix into a dough.
Take teaspoonfuls of the dough and roll into balls. (Makes about 30 biscuits)
Coat the balls by rolling them in the extra sugar and cinnamon.
Place a little apart on a greased baking tray, as they will spread.
Bake for 15-18 minutes at 170C / fan 160C
